• Conversely, if all the heated water was consumed, it increases the temperature, and this whole process repeats until consumption matches the heat accumulated in the heater

When choosing, also take into account whether the tank will be heated by a high-output boiler (faster heating, a smaller volume may be sufficient) or, for example, only by a solar system (where, on the contrary, a larger volume is worthwhile for accumulating heat throughout the day).
